Stick to traditional sun-dried
Currently, most takuan is made without drying radish.
However, this “Hyuga-zuke” sticks to the old-fashioned manufacturing method of drying winter radish from Miyazaki prefecture under the blue sky in winter.
By drying in the sun in the cold wind, the unique sweetness and flavor will increase, giving it a unique crispy texture.
