“Iburigakkoto” is a pickle made by smoke-drying daikon radish and vegetables unique to Akita Prefecture, also known as “Ibushi Takuan”. It is made by smoking daikon radish and pickling it mainly in rice bran and salt, giving it a unique smoked flavor.
